This Festive Bikini – A Recipe

WHere is a simplified take on a beverage featured on a new drinks list. Designed as a party-sized pre-mixed that is packed with essence of a holiday season, making it perfect for a celebration. Any leftover syrup for brunch beverages, desserts, or for another batch of the drink.

Bikini

Serves 10 servings

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Place all the items into a saucepan, bring to a light boil, stirring so the sugar melts. Then, turn off the burner and leave to cool down entirely. Decant into an sterilised bottle, close it keeping it in the refrigerator, it will last for around one month.

Preparing the Batch Mix: Pour all the liquid ingredients into one big jug, leave to sit for 60 minutes, then pass it through , ideally through a fine cloth, to ensure it's fully clarified.

For serving: Add 85ml of the batch mix into a stirring glass containing ice, gently stirring gently for about 60 seconds to chill. Pour to a chilled martini glass or a similar vessel, top with a few cranberries and complete it using a light spray of mandarin oil over the top.
